2 garlic cloves, minced
2 teaspoons fresh ginger, minced
2 teaspoons curry powder
1 teaspoon ground coriander or 1/2 teaspoon ground cumin
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 lb boneless pork, cut into strips
1 tablespoon peanut oil
1 green bell pepper, diced
1 red bell pepper, diced
8 ounces pineapple chunks in juice
2 tablespoons honey
1 tablespoon cilantro, chopped

Steps:

  • Combine garlic, ginger, curry powder, coriander (or cumin), salt, cayenne and toss with pork strips.
  • Heat oil in a large skillet or wok and cook pork 2 to 3 minutes.
  • Stir in peppers. Cook 3 to 4 minutes.
  • Add pineapple, juice and honey. Cook 2 minutes.
  • Stir in cilantro and serve.
