Steps:
- Sauté garlic and onion in olive oil until onion is soft - about 5min
- Add butternut squash and continue to sauté until soft - about 10min
- Add curry powder and cinnamon to coat
- Add a pinch of salt and pepper to taste
- Pour in vegetable broth and coconut milk. Bring to a boil over high heat. Reduce heat to low and simmer for 20-25min.
