Curried Chicken Salad image

One of the best chicken salads you'll ever have! Time does not include chilling time of 4-6 hours.

Number Of Ingredients 11

3/4 cup(s) mayonnaise
1/3 cup(s) major gray's chutney
1/2 teaspoon(s) curry powder
1 teaspoon(s) grated lime zest
2 tablespoon(s) fresh lime juice
1/4 teaspoon(s) kosher salt
2 cup(s) cooked chicken breast, diced
1 can(s) (13.25 oz) pineapple chunks or tidbits,, drained
1 cup(s) celery, sliced diagonally
1/2 cup(s) green onions, thinly sliced
1/4 cup(s) blanched sliced almonds, toasted

Steps:

  • In a large bowl, combine mayonnaise, chutney, curry, lime peel and juice, and salt.
  • NOTE: If there are fruit chunks in the chutney, slice them as thinly as possible.
  • Blend well, and then gently fold in the remaining ingredients. Chill 4-6 hours or overnight.
  • Note: If preparing the night before, be sure to toss again before serving - as all the juices will have settled to the bottom.
  • Serve atop salad greens. But this is also great in a croissant or brioche sandwich.
