CURRIED BUTTERNUT SQUASH SOUP image

Yield 6-8 servings

Number Of Ingredients 10

4 tbsp sweet butter
2 cup finely chopped yellow onion
4-5 tspn curry powder
2 med size butternut squash (about 3 lbs)
2 apples, peeled, corred
3 cups chicken stock (I use vegetable stock)
1 cup apple juice
salt to taste
pepper fresh ground, to taste
1 Granny Smith apple, shredded, to garnish

Steps:

  • Melt butter in pot, Add onion & curry powder. Cook covered at low heat til onions are tender. Peel sqwash, scrape out seeds, chop flesh. Pour chicken stock over cooked onions. Add squash, & apples. Bring to boil. Simmer partially covered, til sqwash & apples are very tender (about 25 min.). Strain. Save stock. Transfer solids into food processor with 1 cup of the stock. Blend until smooth. Return blended squash & stock to pot. Add apple juice to reach desired consistancy. Season with salt & pepper. Heat to serve. Garnish. Enjoy!
