CROCK POT CHEESY CHICKEN image

This is a delicious and satisfying dish that anyone will love! The chicken will become semi-shredded by the time it is done--it literally falls apart. To spice it up a bit you could add a pinch or two or chili powder, cayenne, or even a spoonful of salsa. 09-02-2019

8 boneless skinless chicken strips
1 can(s) cream of chicken or cream of celery soup, undiluted
1 clove garlic, minced
1 medium onion, chopped
1 can(s) (14 oz.) whole kernel corn, drained well
1-1/2 c shredded sharp cheddar cheese
1 box zatarain's yellow rice mix, prepared
1/2 tsp salt
1/4 tsp pepper

Steps:

  • 1. Place chicken pieces in crock pot and cover with chopped onion and minced garlic.
  • 2. Spread the soup evenly over all and cook on Low for 7 hours or on High for 3-1/2 hours.
  • 3. Prepare rice as directed on package.
  • 4. Add drained corn, cooked rice, cheese, and seasonings to the chicken mixture and combine well. Continue to cook for another few minutes until cheese is melted and mixture is hot.
  • 5. Serve and enjoy!
