CROCK POT BEEF CURRY RECIPE image

Yield 4-6 people

Number Of Ingredients 24

3 tbls flour
3 tbls curry powder
750g steak - cubed
we used chuck but any cheap cut will do.
2 tsp crushed garlic
we used garlic out of a bottle
5 rashers of bacon, remove rind and dice
3 carrots peeled and sliced
3 zucchini sliced
3 cobs corn kernels cut off
1 cup beef stock
chicken stock ok. We used ready made liquid stock but can use powder or bullion cubes.
Optional next time I'm going to add ½ cup of sultanas.
try also mushrooms; potato; squash; other favourite vegies.
Method
Combine flour and curry powder in a plastic bag.
Add beef to bag and shake gently until meat coated.
Put vegetables, garlic and bacon into crock pot; give a quick stir to separate. Then add the meat.
Pour stock over top.
Cover and cook for 8-9hours on Low OR 4-5hours on High.
Notes
Serves 4-6
Add or substitute vegetables as needed
This makes a light/medium curry; for a hotter curry add more powder.
