CREOLE TOMATO SALAD image

Yield 6 servings

Number Of Ingredients 9

1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 tsp minced garlic
2 Tbsp chopped fresh herbs (parsley, basil, chervil, tarragon, etc.)
salt and pepper
2 lbs ripe tomatoes
1 large sweet onion
2 medium-size ripe avocados, peeled and pitted
3/4 lb fresh mozzarella cheese, cut into 6 1/2" slices

Steps:

  • 1. In a small bowl, combine oil, vinegar, garlic and herbs. Whisk until well blended, then season with salt and pepper. 2. Cut the tomatoes into 1/2" thick slices. Cut the onion into thin slices or rings. Slice the avocados lengthwise into 1/2" thick slices. Season with salt and pepper. 3. Arrange the tomatoes, onion, avocado and cheese on a large platter. Drizzle with dressing.
