CREAMY WHITE CHILI image

Number Of Ingredients 15

1 lb. boneless skinless chicken breasts, cut into 1/2 inch bubes (about 2 cups)
1 medium onion
1 1/2 t garlic powder
1 T vegetable or olive oil
2 cans (15 1/2 oz each) great northern beans. rinsed and drained
1 can (14 1/2 oz) chicken broth
2 cans (4 oz each) chopped green chilies
1 t salt
1 t ground cumin
1 t dried oregano
1/2 t pepper
1/4 t cayenne pepper
1 c (8 oz) sour cream
1/2 c heavy whipping cream
otional: chopped cilantro and/or chopped green onion

Steps:

  • In a large saucepan, saute chicken, onion and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chilies, and rest of seasonings. Bring to a boil. Reduce heat. Simmer, uncovered, for 30 minutes. Remove from the heat. Stir in sour cream and heavy cream. Serve immediately. Optional: Garnish with chopped cilantro and/or green onions. Serves 4 generously
