Creamy Cucumber Mac Salad image

I made this salad for my dear Mother today...she loves macaroni salad and especially with lots of cucumbers...I buy the tiny cucumbers with the tiny seeds, that way I don't have to remove them... The combination of sour cream and mayonnaise makes this salad so creamy good...change out the veggies with your favorites in replace of...

Number Of Ingredients 17

1/2 c fine diced celery
1/2 c bell peppers - your choice - diced
2 boiled eggs, peeled and chopped
1 small red onion, diced small
2 green onion, sliced, green part only
1 c cucumber , small seeded type - diced
2 Tbsp heaping, sweet pickle relish, or diced sweet pickes
1/2 c shredded, sharp cheddar cheese
1 Tbsp red wine vinegar
1/2 tsp each - season salt & pepper
1 tsp sugar
1/2 tsp celery seed
3/4 c mayonnaie
1/2 c sour cream
8 oz macaroni, i used 4 ounces each - ditalini and elbow macaroni - cook according to package, drain and rinse
1 Tbsp sweet pickle juice - optional - i add this at end if needs more sweetness
I sometimes stir in 1/2 cup miracle whip right before serving

Steps:

  • 1. In a large bowl, toss the first 9 ingredients together.
  • 2. Now, add mayonnaise, sour cream, salt, pepper, sugar, celery seed, and red wine vinegar.
  • 3. Mix well.
  • 4. Now, stir in the pasta and mix till well combined. Taste and adjust seasonings to your preference. This is where I add the juice if needed. Stir in cheese.
  • 5. Refrigerate to chill, at least a few hours. If you like a mac salad that is on the wetter side, after the macaroni absorbs the dressing...you may want to make a batch and 1/2 of the dressing or I add about 1/2 cup miracle whip before serving.. Enjoy!
