CRANBERRY PUMPKIN MUFFINS image

Number Of Ingredients 10

2 eggs
3/4 cup sugar
3/4 cup + 2 tbsp pumpkin puree
1/2 cup oil
1-1/2 cups flour
1/2 tbsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup dried cranberries

Steps:

  • 1. Preheat oven to 375F. 2. In a large mixing bowl, whisk together the eggs and sugar. Slowly beat in pumpkin and oil. Add flour, cinnamon, baking powder, baking soda and salt; mix until smooth but do not overmix. Stir in cranberries. 3. Spoon into muffin cups, filling two-thirds full. Bake 15-20 minutes or until toothpick comes out clean. Makes 12 muffins
