CRANBERRY OATMEAL SPICE COOKIES image

Ingredients
1 1/4 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground cardamom (or 1/2 tsp for more spiciness)
1/8 tsp ground cumin (or 1/4 tsp for more spiciness)
1/4 tsp salt
1 1/2 sticks butter, softened
3/4 cup packed brown sugar
1/3 cup granulated sugar
1 1/2 tsp vanilla extract
1 egg
2 tbs milk
1 cup dried cranberries (or other raisin)
2 cups quick or old-fashioned oats

Steps:

  • irections 1. Combine flour, baking powder, baking soda, cinnamon, cardamom, cumin and salt in a small bowl. Beat the butter, brown sugar, granulated sugar and vanilla in a large mixer (or by hand with a large fork/spoon/whisk) until creamy. Beat in egg. Gradually beat in flour mixture and milk. Stir in cranberries and oats. Drop by rounded tablespoon onto ungreased baking sheets. 2. Bake in preheated 375F oven for 10-12 minutes or until edges are crisp but centers are soft. Let stand for 2 minutes; remove to wire racks to cool completely. 3. Tip: If you don't have ground cardamom on hand, just break open some green cardamom pods, extract the seeds that hold all the flavour and grind in a spice grinder. Discard the pods.
