Couples Rescue Jamaica Cake image

1977 my husband an I went on our very first vacation. We went to couples in Jamaica in September. Needless to say it rained for 10 days. We were in our 20's nd learnd that unlimited drinks grow old very fast. So we turned our attention to cooking. Enjoy.

2 1/2 cup(s) sugar
1 1/2 cup(s) oil
1 1/2 cup(s) chopped pecans
3 cup(s) flour
1/4 cup(s) chopped crystlized ginger
2 large bananas peeled and diced
3 large eggs
20 ounce(s) crushed pineapple with juice
1 teaspoon(s) vanilla
1 teaspoon(s) salt
1 teaspoon(s) baking soda
JAMAICA WHIPPED CREAM
1 cup(s) heavy cream very cold
3 tablespoon(s) powdered sugar
1/2 teaspoon(s) cream of tartar
1/2 teaspoon(s) vanilla
1 tablespoon(s) dark rum
1/2 cup(s) finely crushed pralines

Steps:

  • 1.Mix together sugar, vegetable oil, pecans, flour, and bananas in a 13 x 9 inch pan. Stir in the eggs, pineapple (with juice), ginger, vanilla, salt and baking soda. Mix well. Do not mash the bananas.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes or until cake tests done.
  • Serve with Jamaican whipped cream
  • Whip the cream in the bowl of an electric mixer fitted with the whisk attachment. When it starts to thicken, add the sugar, vanilla, and rum. Continue to whip until it forms stiff peaks. Fold in pralines. Serve cold.
