Cottage Potatoes image

My husband doesn't eat breakfast during the week; however, he does love it on weekends. This recipe, fixed with bacon and eggs starts his day off with a smile.

Number Of Ingredients 10

2 lb unpeeled potatoes, washed
1/2 c onions, chopped
2 Tbsp butter
1 c green bell pepper, chopped
1 tsp paprika, sweet mild
1 tsp lowry's seasoned salt
1/2 tsp black pepper, to taste
tabasco sauce, to taste
3/4 c monterey jack cheese, grated
3/4 c cheddar cheese, grated

Steps:

  • 1. Cut washed potatoes into 3/4-inch cubes; boil until soft. Preheat oven to 350°F.
  • 2. In skillet, sauté onions in butter until translucent. Add bell pepper and sauté until soft. Transfer to a bowl and mix with potatoes, paprika, seasoned salt, pepper, and several drops of Tabasco.
  • 3. Put mixture in greased 8" x 11" oven-proof dish and bake until potatoes begin to brown, about 20 minutes.
  • 4. Remove from oven and sprinkle with both cheeses. Return to oven briefly until cheese melts.
  • 5. NOTE: When I make this, I cut the ingredients in half and use a 2-quart casserole dish to bake it.
