Cornmeal Mush image

Cornmeal mush is well-liked as a down-home Amish comfort food. It can be served fried, or even -for those who can't wait - in a bowl as hot cereal with sugar and milk. This version is from Lizzie's Amish Cookbook.

Number Of Ingredients 4

3 c water
1 c cornmeal
1 tsp salt
oil for frying

Steps:

  • 1. Stir cornmeal and salt into water in a saucepan over medium heat until mixture comes to a boil.
  • 2. Lower heat and simmer for 20 minutes.
  • 3. Pour into loaf pan and chill at least 4 hrs or overnight.
  • 4. Unmold and cut into 1/4 inch slices.
  • 5. Heat oil in skillet and fry slices until they are golden brown and have crispy edges. Flip to finish both sides.
  • 6. Cook time includes cooling time. Can be served sweet with syrup or savory with ketchup!
