Corn Spoon Bread image

A friend of my son, Mark gave this recipe to him years ago. He inturn gave it to me. I have made this a lot for him and for company. It is really good..soft and creamy, the way we like it. I think you will too!

Number Of Ingredients 7

2 eggs
1 can(s) creamed corn
1 can(s) whole kernel corn, drained
1/2 c butter, melted
1 pkg jiffy corn muffin mix
1 c sour cream
1 c mozarella cheese, grated

Steps:

  • 1. Beat eggs in casserole dish and add corn,melted butter, muffin mix and sour cream. Mix altogether. Do 'NOT' add mozarella cheese yet. Bake in 350F degree oven for 30 minutes.
  • 2. Add 1 cup mozarella cheese on top of casserole, don't stir. Bake for 25 minutes more.
