Steps:
- Heat oven to 375°F. Grease or spray an 8" x 8" baking dish.
- Arrange half of the potato slices in a greased 8-in. square baking dish; sprinkle with salt, pepper and half of the ham. Layer remaining potatoes and ham, then sprinkle with pimientos.
- In a small bowl, whisk the eggs, milk, chives and herbs; carefully pour over potatoes and ham. Cover and bake at 375°F for about 40 minutes or until a knife inserted near the center comes out clean. Uncover; bake 15 minutes longer or until lightly browned on top.
- Let dish stand for 10 minutes before cutting. Sprinkle with additional chives if desired.
- Yield: 6 servings
- Note: You can also substitute pork or turkey sausage for the ham or even use shredded chicken. If you use chicken, be sure to change the coriander, clove and cinnamon to poultry seasoning - this keeps the flavors balanced.
