Comfort Essentials: Grilled Chicken Cheese Sammie image

Here is another addition to my grilled cheese recipes. Made these up for yesterday's lunch, and everyone liked them enough that I was requested to put them on the lockdown rotation. I made it two ways: In a panini press, and in a skillet... both were well received. They are easy/peasy to put together, plus you can modify...

PLAN/PURCHASE
1 large chicken breast, finely diced, and cooked
2 Tbsp mayonnaise, i prefer duke's
2 Tbsp sour cream
1 tsp hot sauce, i prefer frank's
1/2 tsp paprika, hot or mild, your choice
1/4 tsp garlic powder
1 pinch cayenne pepper, or to taste
2 oz cream cheese, softened
2 oz cheddar cheese, shredded
ADDITIONAL ITEMS
4 slice sandwich bread, your choice, lightly toasted
melted butter, as needed
OPTIONAL ITEMS
freshly sliced tomatoes
ripe avocado slices
sliced dill or sweet pickles
a big steaming bowl of tomato soup
chips, i prefer vinegar flavored

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients (mise en place).
  • 3. Finely dice the chicken, and sauté with a bit of butter, salt and pepper, until cooked through. Allow the chicken to cool, then add to a bowl and with the other ingredients and combine.
  • 4. Spread half the mixture to one side of a slice of bread, place another bread slice on top, then butter the outside of bread slices. Do the same for the other sandwich.
  • 5. Add some avocado, tomatoes, pickles, or other goodies at this time.
  • 6. Place into a hot pan, over medium heat.Bake until the bread is toasty, and the cheese is nice and melty, about 2 - 3 minutes per side.
  • 7. I also did this in a panini press.
  • 8. PLATE/PRESENT
  • 9. Serve with some chips or other items, and maybe a nice tall cold one. Enjoy.
  • 10. Keep the faith, and keep cooking.
