Here is another addition to my grilled cheese recipes. Made these up for yesterday's lunch, and everyone liked them enough that I was requested to put them on the lockdown rotation. I made it two ways: In a panini press, and in a skillet... both were well received. They are easy/peasy to put together, plus you can modify...

Steps:
- 1. PREP/PREPARE
- 2. Gather your ingredients (mise en place).
- 3. Finely dice the chicken, and sauté with a bit of butter, salt and pepper, until cooked through. Allow the chicken to cool, then add to a bowl and with the other ingredients and combine.
- 4. Spread half the mixture to one side of a slice of bread, place another bread slice on top, then butter the outside of bread slices. Do the same for the other sandwich.
- 5. Add some avocado, tomatoes, pickles, or other goodies at this time.
- 6. Place into a hot pan, over medium heat.Bake until the bread is toasty, and the cheese is nice and melty, about 2 - 3 minutes per side.
- 7. I also did this in a panini press.
- 8. PLATE/PRESENT
- 9. Serve with some chips or other items, and maybe a nice tall cold one. Enjoy.
- 10. Keep the faith, and keep cooking.
