CITRUS CHICKEN WITH PEPPERS image

1 c. uncooked brown rice
4 boneless, skinless chicken breasts
1 tbs. canola oil
1 med. sweet red pepper, sliced
1 med. orange pepper, sliced
1 tbs. cornstarch
1/3 c. orange juice
2 tbs. water
2 tbs. lime juice
2 tbs. honey
1/4 tsp. salt
1/4 tsp. paprika
dash pepper

Steps:

  • Prepare rice according to package directions. Meanwhile, in a large skillet over medium heat, cook chicken in oil for 5 minutes on each side or until meat thermometer reads 170*. Remove and keep warm. IN the same skillet, saute the peppers until tender. In a small bowl, combine the cornstarch, orange juice, water, and lime juice until smooth; stir in the honey, salt, paprika, and pepper. Sir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Return chicken to the pan; heat through. Serve with rice.
