Cinnamon Zucchini Blondies image

A sweet treat that uses up some of that extra zucchini from the garden. I just coarsely chop the zucchini, but you can shred it if you prefer.

1/3 cup margarine, softened (or butter)
1 cup dark brown sugar, firmly packed
1 egg
1 1/2 teaspoons vanilla
1 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup zucchini, chopped
1/2 cup nuts, chopped (I like pecans)

Steps:

  • Pre-heat oven to 350°F.
  • Grease and flour a 8x8-inch baking pan.
  • In a large bowl, beat margarine and sugar until fluffy.
  • Add egg and vanilla; beat well.
  • Add dry ingredients and stir, just until moistened.
  • Stir in zucchini and nuts.
  • Pour into pan and bake 25 minutes.
  • Cool in pan.
  • Cut into 9 bars.
