Steps:
- 1. Cinnamon Apples In a small saucepan, combine apples, butter, brown sugar and cinnamon. Bring to a simmer, cook until apples are softened and sugar is caramelized. Remove from heat and set aside.
- 2. Muffins Preheat oven to 375 degrees. Line muffins tin with liners.
- 3. In bowl whisk together flour, baking soda, and cinnamon.
- 4. Cream together butter and sugar.
- 5. Add egg white, yogurt and vanilla. Mix well.
- 6. Stir in flour until combined.
- 7. Fold in apples so they are evenly distributed throughout the batter.
- 8. Divide the batter among the muffin cups.
- 9. Sprinkle tops with sugar in the raw.
- 10. Bake for 15 to 18 minutes. Cool in pan 10 minutes, transfer to cooling rack.
- 11. Enjoy!
