Number Of Ingredients 16

1 c all purpose flour
1/2 tsp baking powder
1/2 c butter or margarine
1/4 c powdered sugar
1 Tbsp grated orange or lemon peel
FILLING
1 c semi-sweet chocolate chips
TOPPING
3 eggs
3/4 c granulated sugar
2 Tbsp lemon juice or 3 tbsp. orange juice
1 Tbsp grated orange or lemon peel
1 dash nutmeg
3 Tbsp all purpose flour
1/2 tsp baking powder
powdered sugar, for garnish

Steps:

  • 1. Combine flour, baking powder, powdered sugar and orange or lemon peel in a bowl.
  • 2. Add butter. Blend with hands until mixture resembles cornmeal. You may do this in a food processor - process until mixture forms a soft ball.
  • 3. Press mixture evenly over bottom of a microsafe baking dish. Place dish on a microsafe meat rack or on a microsafe platter.
  • 4. Microwave for 4 minutes at HIGH power. Remove from microwave oven.
  • 5. Sprinkle chocolate chips all over hot crust. As chocolate melts, spread evenly over pastry.
  • 6. Combine all remaining ingredients in a bowl. Mix thoroughly. Pour mixture over chocolate layer.
  • 7. Microwave for about 8 minutes at MEDIUM HIGH power, turning dish once if your microwave is not a rotating one.
  • 8. Let cake stand for a few minutes. Cool in pan. Dust with powdered sugar. Cut into bars or thin wedges depending on dish used.
