Steps:
- 1. Slice shrimp from back leaving small donut-like hole in center. Rinse away veins, drain 2. Place shrimp in a bowl; add egg white, cornstarch and water. Mix well; consistency should be silky and milky 3. In large wok, heat 2 cups of oil. Place shrimp in oil, bubbles should rise from shrimp like champagne bubbles. Turn shrimp gently. When white and fluffy, remove from oil and drain 4. In a clean wok, heat 1 Tbs. oil. Mix Garlic Sauce ingredients. Stir well, bring to a boil, lower heat and simmer 5. Combine cornstarch and water, add to sauce. Stir until thickened. 6. Add shrimp. Toss and stir. Stir in sliced scallions and serve with rice
