Chickpeas with Yassa Sauce image

Vegetarian Senegalese. Serve with white rice.

1 tablespoon vegetable oil, or as needed
4 medium onions, finely chopped
1 habanero chile, seeded and minced
6 cloves garlic, chopped
½ head cabbage, chopped
1 (29 ounce) can chickpeas, rinsed and drained
¼ pound carrots, chopped
1 cup pitted green olives
¼ cup red wine vinegar
3 medium lemons, juiced
2 tablespoons Dijon mustard
1 teaspoon all-purpose vegetable seasoning
¾ teaspoon ground black pepper
2 large bay leaves

Steps:

  • Heat oil in a pot over medium-high heat. Saute onions, habanero, and garlic in the hot oil until soft, 5 to 7 minutes. Add cabbage and cook until softened. Stir in chickpeas, carrots, olives, vinegar, lemon juice, Dijon, vegetable seasoning, pepper, and bay leaves.
  • Reduce heat and let simmer until flavors have melded, 1 hour or more.
