- saute onion til it turns brown (10 minutes) stir in garlic, cumin, coriander, ginger and cinnamon, saute 30 seconds. Add tomatoes, chickpeas, 1/4 cup water simmer 10 minutes. Meanwhile toast couscous in small pan, for 5 minutes or until fragran. Add 1/3/4 cup water. boil. let stand 5 minutes Stir in dates and lemon juice, season with salt and pepper, serve over couscous. sprinkle with cilantro.
