Chicken with Green Peppers Stir-fry image

2 pounds Chicken
2 Green Peppers
3 Red Peppers
4 cloves Garlic Clove, can substitute red pepper flakes if desired
1/2 Egg White (for marinade)
1 tablespoon Cornstarch (for marinade)
1 tablespoon Soy Sauce (for marinade)
3 cups Peanut Oil
2 tablespoons Soy Sauce (for seasoning sauce)
1 tablespoon Brown Vinegar (for seasoning sauce)
1 teaspoon Cornstarch (for seasoning sauce)
1 teaspoon Sesame Oil (for seasoning sauce)
1 teaspoon Sugar (for seasoning sauce)
1/2 teaspoon Salt (for seasoning sauce)

Steps:

  • Remove all bone from chicken, cut into 1" cubes. Soak with 1 tablespoon soy sauce, 1 tablespoon, cornstarch, and 1/2 egg white. Marinade for at least 1/2 hour.
  • Remove seeds and stems from peppers and cut into 1" squares. Slice garlic.
  • Heat peanut oil to boiling point, fry chicken about 1/2 minute or until done. Remove chicken from pan and drain oil.
  • Use 2 tablespoons of oil to fry garlic until golden, add peppers and quickly stir fry a few seconds. Add the chicken and seasoning sauce. Stir until sauce thickens. Serve immediatly.
