Chicken Waldorf Salad image

I threw this together one day and it's now a family favorite. On soft rich bread or croissant it makes an excellent sandwich. On these warm summer days it is an easy and elegant looking lunch or dinner served on butter lettuce leaves. The recipe is very forgiving. Number Of Ingredients 7

1 can(s) (12.5 oz) or 1-1/2 cups diced cooked chicken
1 medium tart-sweet apple, diced and unpeeled
1/2 c diced celery
1/2 c diced walnuts
1/3 c (or more) dried chopped cranberries*
1/3 c (approx) lite vanilla-bean yogurt
1/3 c mayo

Steps:

  • 1. In small container combine yogurt and mayo, set aside. Mix remaining ingredients in larger bowl, toss and add the yogurt dressing. Mayo can be eliminated if less fat is desired. Chicken can also be eliminated for vegans.
  • 2. Served on lettuce leaves in 1/2 cup portions will serve about 5. Makes about 4 or 5 generous sandwiches. Recipe can easily be doubled. *Try red seedless grapes for a refreshing change to cranberries.
