1 Tbsp. oil
1 cup chopped onions
1 cup chopped poblano chiles
1 pkg. (1 oz.) TACO BELLĀ® Taco Seasoning Mix
3 cups fat-free reduced-sodium chicken broth
2 cups shredded cooked chicken
1 can (14.5 oz.) diced tomatoes, undrained
9 oz. (1/2 of 18-oz. pkg.) pre-cooked polenta, cut into 1/2-inch-thick slices, quartered
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
3 Tbsp. chopped fresh cilantro

Steps:

  • Heat oil in large saucepan on medium heat. Add onions and chiles; cook 5 min. or until vegetables are crisp-tender, stirring frequently. Stir in taco seasoning mix.
  • Add all remaining ingredients except sour cream and cilantro; stir. Bring to boil, stirring frequently; simmer on medium-low heat 15 min., stirring occasionally.
  • Serve topped with sour cream and cilantro.
