Chicken Fingers with Honey Mustard image

I have a backlog of recipes to be added to my cookbook, and this is one of them. But I remember it as being easy, delicious, and, how do you say? clean tasting? If you want to make your own chicken nuggets, instead of the over-processed ones you can buy, here's one choice! Also, if it's cheaper to buy chicken strips, that's all the more easy for you.

HONEY MUSTARD:
1/2 cup(s) honey
1/4 cup(s) dijon mustard
CHICKEN STRIPS:
4 - chicken breasts, boneless and skinless (4 oz each)
1 cup(s) flour
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
3/4 cup(s) milk
1 cup(s) oil for frying

Steps:

  • Mix honey and Dijon ahead of time. Making it a couple of days in advance will allow the flavors to mix and enhance.
  • Cut chicken into 1/2" x 2" strips.
  • Mix flour, salt, and pepper in a shallow bowl. Dip chicken in milk. Roll in flour mixture to coat well. Place chicken on waxed paper.
  • Pour 1/4" of oil into a large heavy skillet. Heat over medium-high heat to 350*F, or until a cube of white bread dropped in oil browns with 1 minute.
  • Divide chicken into batches. Place chicken in an even layer in hot oil. Fry, turning once, for about 3 minutes on each side or until golden brown and crisp. Drain on paper towels. Serve with sauce.
