Steps:
- Preheat oven to 400 degress
- Slice breasts in halve. Pound thin. Place prosciutto and cheese in side. Roll up and secure.
- Place flour, eggs and bread crumbs in three pans. Season flour with salt and pepper. Beat eggs. Mix melted cheese and oregano into bread crumbs.
- Roll chicken into flour, then the eggs, then the bread crumbs, pressing to coat. Place on baking sheet. Bake until golden brown for 30 minutes.
- For the sauce: Melt butter in pan, add flour and stir until golden, 2 minutes. slowly whisk in mild, then add mustard. Let simmer until thickened, 5 minutes. Add Parmesan and stir until melted. Season with salt and pepper.
- Remove toothpicks from chicken and serve with sauce.
