I made this last night because I had to get vegetables ( besides potatoes ) into my men. I had arborio rice, squash and Philadelphia Garlic Sauce Starter ( I can't think of the name right now, but they keep it in the cooler section by cheese and that kind of stuff ). The menfolk liked it. We'll have it again.

Steps:
- Start by cooking arborio rice as directed on package. I used chicken broth instead of water. It takes 30 minutes or so of constant stirring, but is SO worth the effort.
- Saute onion in olive oil, add chicken ( i cook mine in the skillet, then dice it cuz I hate touching raw chiken ).
- Add garlic, squash, Philadelphia cream cheese sauce, and rice. Cook until squash is done. Life is good.
