Chicken Cacciatore or Hunter's Chicken image

Modified from The Joy of Cooking. Great tasty,low-fat meal. The system is picky about wording. The brandy is listed as optional, but I think its adds a lot to the flavor. You can add it or not.

Number Of Ingredients 16

4 lbs chicken, cut up
2 tablespoons olive oil
1 medium onion, sliced
1 green pepper, sliced
2 garlic cloves, crushed
1/2 cup tomato paste, 1 6 oz.can (the system made me post it this way. It's 1 small can tomato paste)
2 cups chicken broth
1/2 cup dry white wine
1 teaspoon salt
1/2 teaspoon black pepper
1 bay leaf
1 teaspoon dried sweet marjoram
1/2 teaspoon dried thyme (or more)
1 -2 teaspoon dried basil
1 cup sliced mushrooms (optional)
2 tablespoons brandy (optional)

Steps:

  • Skin chicken pieces and brown in hot olive oil.
  • Remove chicken.
  • Saute onion, green pepper, optional mushrooms, and garlic.
  • Add all remaining ingredients. Stir to combine.
  • Simmer, covered, about 1 hour.
  • Serve over hot cooked pasta.
