CHEWY PEANUT BUTTER COOKIES image

Yield 18 cookies

Number Of Ingredients 11

1/2 c. room temperature margarine (1 stick)
1/2 c. peanut butter (smooth or crunchy)
1/2 c. sugar
1/2 c. brown sugar, packed
1 egg
1 tsp Vanilla
1 c. all purpose flour
1 tsp. baking soda
1/4 tsp Salt
OPTIONAL:
1/4 - 1/2c chopped Peanuts, peanutbutter chips or butterscotch chips

Steps:

  • Pre-heat Oven to 350 degrees and line two cookie pans with parchment paper. In a bowl, mix together Flour, salt, and baking soda. In a separate bowl, Beat together both sugars, peanut butter, and margarine until smooth. Add egg and vanilla and beat until fluffy. add flour mixture to the wet mixture, If you have chosen to add any of the optional ingredients, add them now as well. Mix until well combined. Drop rounded spoonfulls of batter onto prepared pan about 2 inches apart, flatten slightly with a fork, and bake one pan at a time in 350 degree oven until cookies just barely begin to brown at the edges, (they will still be very soft) about 10-12 minutes. Cool on pan for 5 minutes and then transfer to cooling rack to cool completely.
