Cherry Chocolate Coconut Bars image

Original recipe uses chopped walnuts in place of the chips. I prefer the chips. Also, the filling will be spread very thin. It may not look like there is going to be enough to cover the crust, but it will, and they bake up, so it's all good!

Number Of Ingredients 12

1 cup(s) flour
3 tablespoon(s) confectioners' sugar
1/2 cup(s) cold butter
2 - eggs
1 cup(s) sugar
1 teaspoon(s) vanilla extract
1/4 cup(s) flour
1/2 teaspoon(s) baking powder
1/4 teaspoon(s) salt
3/4 cup(s) chocolate chips
1/2 cup(s) chopped maraschino cherries
1/2 cup(s) flaked coconut

Steps:

  • Preheat oven to 350. Spray or lightly grease a 13x9x2 inch baking pan. In bowl or food processor, combine 1 C flour, confectioners sugar, and cut in butter until crumbly. Spread evenly in pan and press down. Bake 10-12 minutes, until lightly browned. Set aside to cool slightly.
  • Combine eggs, sugar and vanilla in a bowl, then add flour, baking powder and salt. Stir in chips, cherries and coconut. Spread over crust. Bake 20-25 minutes, until firm. Cool, and then cut into bars.
