Cheesy Potato~ Beef Casserole image

By combining a couple favorites, my daughter and I came up with this. It is a kind of throw it all in one dish recipe, but we love it :)

Number Of Ingredients 9

1 pound(s) ground chuck
1/2 cup(s) frozen chopped onions
1 can(s) cheddar cheese soup; undiluted
14 1/2 ounce(s) can of creamed corn, undrained
4-5 - potatoes, medium
1 cup(s) cheddar cheese, shredded
1 cup(s) crushed potato chips, or panko crumbs (optional)
- garlic powder
- seasoned salt, and pepper

Steps:

  • Preheat oven to 375. Brown the beef and onions; drain. Combine the undrained creamed corn and beef mixture; season to taste.
  • Place the beef -corn mixture in a 13X9 inch baking pan. Peel and thinly slice potatoes. Combine the potatoes and cheddar soup; mix well. Place them on top of the beef layer; spread evenly.
  • Put the crushed chips and cheese on top. Cover with tin- foil. Bake about 55 min to 1 hour, and then test the potatoes for doneness. If they are not tender keep cooking till a fork easily goes through.
  • Uncover, add more cheese if you are like me; and cook for about 10 min more, till bubbly and golden. Let stand 10 min. before serving.
