Steps:
- *Spray a large nonstick skillet with nonstick spray; add carrots, onion and almonds. Cook over medium heat, stirring constantly until lightly browned. *Add rice to carrot mixture; mix well. Stir in broth and lemon pepper. Bring to a boil; reduce heat. Cover and simmer until liquid is absorbed and rice is tender, about 20 minutes. *Serve garnished with parsley.
