Steps:
- Rub chicken with adobo seasoning; set aside. Heat 1/4 cup of the dressing in large skillet on medium-high heat. Add chicken; cook 7 to 10 min. or until lightly browned, turning occasionally. Remove chicken from skillet; cover to keep warm. Drain and wipe out skillet with paper towels.
- Add remaining 1/4 cup dressing and all remaining ingredients except chicken and rice to skillet; cook and stir 3 min. Reduce heat to medium-low. Return chicken to skillet; simmer, covered, 45 min. or until chicken is cooked through.
- Spoon over rice to serve.
