BROWN RICE PILAF WITH CHICKEN SAUSAGE image

Number Of Ingredients 8

2 tblsp olive oil
1 medium onion, chopped
1 red bell pepper, chopped
1 lb chicken sausage, sliced or chunked
1 clove garlic, minced
1.5 cups brown rice
3 cups low sodium gluten free chicken broth
2 cups spinach or basil leaves, washed

Steps:

  • saute onion pepper and chicken sausage in oil over medium high heat until sausage is cooked through or nearly so add garlic and saute for another 2 or three minutes stir in rice add broth bring to a boil then reduce to simmer, cover and cook for 45-50 minutes or until almost all liquid is absorbed. stir in spinach or basil
