Broiler Casserole image

A casserole cooked under the broiler! You can make it with different meats but they must be the sort that are tender with short cooking times e.g. good quality frying steak, or pork fillet.

2 onions, thinly sliced
1 red bell pepper, thinly sliced
2 large tomatoes, thinly sliced
1 ΒΌ pounds skinless, boneless chicken breast meat - cut into strips
1 (16 ounce) jar spaghetti sauce
water as needed

Steps:

  • Preheat oven to Broil/Grill.
  • Place onions, bell pepper and tomatoes in a broiler pan. Broil until softened and starting to brown.
  • Add chicken, sauce and water as needed for desired consistency. Mix all together. Broil for about 10 minutes, until chicken is cooked through (no longer pink) and sauce is piping hot.
