Breakfast Casserole image

Whether you serve this easy casserole for breakfast or dinner, you will not be disappointed. Quick and easy, it's creamy, cheesy and filled with delicious smoky bacon flavor. This was gobbled up very fast in the Test Kitchen.

Number Of Ingredients 9

1 pkg real bacon pieces
1 c chopped onion
2 c cheddar cheese, shredded
1 1/4 c Swiss cheese, shredded
4 c frozen hash brown potatoes, shredded
1 1/2 c small curd cottage cheese
6 large eggs
3 Tbsp oil
salt and pepper, to taste

Steps:

  • 1. Let hash browns thaw. Preheat oven to 350 degrees. Heat oil in skillet and cook onion until tender. Add package of real bacon pieces last few minutes of cooking. Pour in a large bowl.
  • 2. Add thawed hash browns to onion and bacon mixture. Add cheddar, Swiss cheese, and cottage cheese. Mix well.
  • 3. In a separate bowl, beat eggs lightly with fork. Add to mixture. Add salt and pepper to taste.
  • 4. Transfer to a 9 x 13 pan that has been sprayed with non-stick cooking spray. Bake at 350 degrees for 35 minutes.
