1 c coconut
1 c dates, chopped
3/4 c sugar
3 c brazil nuts,whole
1 jar(s) 4-oz. red maraschino cherries
1 jar(s) 4-oz. green maraschino cherries
3 large eggs
3/4 c all purpose flour, sifted
1/2 tsp salt
1/2 tsp baking powder
1 tsp vanilla

Steps:

  • 1. Preheat oven to 300 degrees. Grease and line a loaf pan with wax paper.
  • 2. In a large bowl,combine nuts, dates, coconut and well drained cherries. Sift flour, salt and baking powder in a small bowl, sprinkle over nut mixture. Mix well using hands until all coated.
  • 3. In a small bowl beat eggs until foamy, stir in vanilla. Stir into fruit and nut mixture till well coated. Spoon into prepared pan and bake at 300 degrees for 1 hour and 45 minutes. Cool in pan about 15 minutes. Place on wire rack to cool completely. When completely cool wrap in foil and store in refrigerator.
