Blueberry Butternut Squash Bread image

This was in my church cook book many years back. I know it is a very old recipe.My Aunt had this recipe in the cook book. It was so delicious. I needed to share this recipe. The combo sounds strange,but boy it is delicious!

3 eggs beaten
1 1/4 c sugar
1/2 c canola oil
2 tsp vanilla extract
1 c butternut squash cooked and mashed
1 c fresh or frozen blueberries,if frozen drain well after thawing
1/2 c walnuts chopped
3 c all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 c apple sauce

Steps:

  • 1. combine eggs,sugar,oil, apple sauce,vanilla and squash
  • 2. sift dry ingredients together
  • 3. add dry ingredients to wet ingredients and sir well to combine
  • 4. fold in blueberries and nuts
  • 5. pour in to 2 greased loaf pans. Bake at 325 degree oven for 1 hour and 15 minutes
  • 6. cool on wire rack. Enjoy
