butter for pan
2 c flour
1 c sugar
1/4 tsp salt
2 tsp baking powder
2/3 c vegetable oil
2 eggs
1 c milk
TOPPING
1 tsp cinnamon
2 Tbsp sugar
3 c blueberries, fresh or frozen
NOTE: IF USING LARGE FROZEN BLUEBERRIES 2 CUPS WORKS BEST. IF USING SMALL (WILD) FRESH OR FROZEN BLUEBERRIES, USE UP TO 3 CUPS

Steps:

  • 1. Preheat oven to 350 degree F. and butter a 9x13-inch baking pan.
  • 2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the oil, milk, and eggs. Mix with an electric mixer for 3 minutes.
  • 3. Pour the batter into the prepared pan, then evenly sprinkle the blueberries on top.
  • 4. In a small bowl, mix sugar and cinnamon. Sprinkle evenly over cake.
  • 5. Bake for 50 minutes or until tester comes out clean. I serve warm with whipped cream. Enjoy!!
