Number Of Ingredients 10

1 pound lightly breaded okra
8 ounces fresh or frozen whole kernel corn
8 ounces yellow summer squash
8 ounces diced/chunked chicken (pre-cooked)
4 ounces green peppers
4 ounces onion
1 teaspoon garlic powder
1 teaspoon pepper
1 teaspoon salt
Butter flavored vegetable oil or olive oil

Steps:

  • Sauté onions and peppers with oil. Remove from skillet. Sauté chicken in the same skillet with oil. Remove after heating thoroughly. Sauté corn and squash in same skillet with oil. Remove. Fry okra in skillet until golden brown. Add salt, pepper and garlic powder. When okra is done, begin adding all ingredients back into the skillet until reheated to desired temperature for serving.

4 ears corn, shucked
2 tablespoons extra-virgin olive oil
1 cup diced Spanish onion
1 clove garlic, minced
2 cups fresh or defrosted frozen lima beans
2 cups diced heirloom tomatoes
1 1/2 tablespoons butter, at room temperature
1 1/2 tablespoons mayonnaise
Juice of 1 lime
Kosher salt and freshly ground black pepper
2 tablespoons fresh basil, cut into chiffonade
2 tablespoons grated Pecorino-Romano cheese
1 tablespoon fresh cilantro, chopped
1 tablespoon fresh mint, cut into chiffonade
1 teaspoon smoked paprika

Steps:

  • Heat a grill pan over medium-high heat. Grill the corn until lightly charred on all sides, about 10 minutes. Set aside to cool slightly, then cut off the kernels and reserve.
  • Heat the oil in a large saute pan over medium heat. Add the onion and sweat until translucent, about 5 minutes. Add the garlic and cook for another minute. Add the lima beans and tomatoes and cook until tender, about 5 minutes.
  • Add the reserved corn to the saute pan. In a small bowl, mix together the butter and mayonnaise. Add the mixture to the succotash along with the lime juice. Season with salt and pepper. Transfer to serving bowl.
  • Sprinkle with the basil, Pecorino-Romano, cilantro, mint and smoked paprika.

This is one time that frozen vegetables work better than fresh. You can play with different spices if you like, it's very forgiving. A finely diced Jalapeno is good for a little bite. Butter works well to replace the bacon drippings, or you can live longer (if not better) and skip the fat all together! Add Sausage and serve over rice for a great main dish! Update! I've made this often substituting fresh okra, but I just made it for the first time with fresh corn right off the cob. I added the corn raw a little before the okra and just heated it through. It was fantastic! Crisp and sweet!

1 cup frozen corn, thawed
1 cup frozen butter beans, thawed (Limas)
1 (15 ounce) can diced tomatoes with juice
1/8 teaspoon dried oregano
1/8 teaspoon dried basil
salt and pepper
2 cups frozen cut okra, still frozen

Steps:

  • Add the first six items to a sauce pan and heat covered.
  • Add the frozen okra and heat covered, on low, until it's hot and just tender.
  • Add the salt and pepper to taste and serve.
