OLD-WORLD RICOTTA CHEESECAKE

I reconstructed this dessert based on an old recipe that had been in the family for years but was never written down. The subtle cinnamon flavor of the zwieback crust reminds me of the cheesecake I enjoyed as a child, but substitute other crumbs if you like. -Mary Beth Jung, Hendersonville, North Carolina

1-2/3 cups zwieback, rusk or plain biscotti crumbs
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1/3 cup butter, softened
FILLING:
2 cartons (15 ounces each) ricotta cheese
1/2 cup sugar
1/2 cup half-and-half cream
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 teaspoon finely grated lemon zest
1/4 teaspoon salt
2 large eggs, room temperature, lightly beaten
TOPPING:
1 cup sour cream
2 tablespoons sugar
1 teaspoon vanilla extract

Steps:

  • Combine zwieback crumbs, sugar and cinnamon; mix in butter until mixture is crumbled. Press onto bottom and 1-1/2 in. up sides of a greased 9-in. springform pan. Refrigerate until chilled., Preheat oven to 350°. Beat all filling ingredients except eggs until smooth. Add eggs; beat on low until combined. Pour into crust. Place pan on a baking sheet., Bake until center is set, about 50 minutes. Remove from oven; let stand 15 minutes, leaving oven on. Combine topping ingredients; spoon around edge of cheesecake. Carefully spread over filling. Bake 10 minutes longer. Loosen sides from pan with a knife; cool 1 hour. Refrigerate 3 hours or overnight, covering when completely cooled. Remove rim from pan. Refrigerate leftovers.

1 1/2 c zwieback cracker crumbs
1/3 c granulated sugar
1/3 c melted butter not margarine

Steps:

  • 1. Preheat oven to 350^ Blend zwieback crumbs, sugar and butter . Press firmly over bottom and halfway up sides of 9-inch springform pan for cheese cake recipe or press firmly over bottom and up sides of 9-inch pie pan for pies. Bake for 8-10 minutes. Cool.

1 cup milk
4 tablespoons butter, cut into pieces
¼ cup honey
½ teaspoon salt
⅔ cup white sugar
1 (.25 ounce) package active dry yeast
¼ cup warm water
1 egg
4 cups all-purpose flour
½ teaspoon freshly grated nutmeg

Steps:

  • Heat milk in a small saucepan until just starting to bubble. Remove from heat; stir in butter, honey and salt. Set aside and let cool. Set aside 2 teaspoons sugar. Stir remaining sugar into milk mixture. Let cool to room temp.
  • In a large bowl, combine yeast and lukewarm water. Set aside 5 minutes for yeast to soften. Beat cooled milk mixture, egg, 4 cups flour, and nutmeg into yeast mixture.
  • Knead dough in a bowl, adding up to 1/2 cup more flour if necessary, until a smooth, soft dough forms. Divide dough into 8 balls 3 inches in diameter. Place balls 4 inches apart on lightly greased cookie sheets; pat into 4 inch rounds. Brush tops of rounds with water and sprinkle with reserved sugar. Set aside, lightly covered with kitchen towels, about 1 hour, or until doubled in size.
  • Preheat oven to 350 degrees F (180 degrees C). Bake raised rounds 30 minutes, or until golden brown. Remove from oven; leave oven on. Let cool on sheets 10-15 minutes, or until cool enough to handle.
  • With a serrated knife, cut each round into six 1/2-inch slices. Place slices, cut sides down, on cookie sheets and return to oven for 5 minutes. Turn slices and bake 5 to 7 minutes longer, or until golden on both sides. Turn off heat and leave in unopened oven until cool, about 45 minutes. Store in tightly covered container.

1 1/2 cups crushed zwieback toasts
1 cup sugar
1 teaspoon cinnamon
8 tablespoons unsalted butter, melted
For filling
2 (8-oz) packages cream cheese, softened
4 large eggs, separated
1 cup sugar
1 cup heavy cream
1 tablespoon all-purpose flour
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F and butter a 10-inch springform pan.
  • Make crust:
  • Stir together crust ingredients. Reserve 1/4 cup for topping and press remainder onto bottom and 1 1/2 inches up side of springform pan.
  • Make filling:
  • Beat cream cheese with a wooden spoon in a large bowl until smooth and creamy and add yolks 1 at a time, beating well after each addition. Beat in sugar, cream, flour, and vanilla. Beat whites with an eggbeater in another large bowl until they just hold stiff peaks and fold into cream-cheese mixture gently but thoroughly. Spoon filling into crust, smoothing top, and sprinkle evenly with reserved crumb mixture. Put springform pan in a shallow baking pan and bake cake on lowest rack of oven 1 hour. Turn oven off and open oven door 5 to 6 inches. Cool in oven 1 hour. Chill, covered, at least 3 hours. Remove side of pan and let cheesecake stand at room temperature 30 minutes before serving.

1 Package (2 1/4 teaspoons active dry yeast
1/4 cup plus 1/2 teaspoon sugar
1/4 cup warm water
1 cup plus 2 tablespoons milk
4 tablespoons (1/2 stick) butter
1/2 teaspoon vanilla extract
1/8 teaspoon ground mace
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 egg lightly beaten
3 3/4 cups all -purpose flour
2 tablespoons butter, melted, for glazing

Steps:

  • In sm bowl, combine yeast,1/2 tsp sugar, warm water. Set in warm place until mixture foams, 5/10 minutes. In small saucepan, mix milk, remaining 1/4 cup sugar. Add 4 Tbs butter, heat until butter has melted. Transfer mixture to bowl and cool to lukewarm. In large bowl or in food processor, combine cooled milk mixture with yeast mixture, stir in vanilla. Add mace, cinnamon, nutmeg and mix well. Beat in egg. Slowly add flour, adding just enough to make a smooth dough that is not sticky. If mixing by hand, dough will become too stiff to stir, knead in the last of flour with fingers. Knead well for at least 5 minutes, forming the dough into a ball. If using a food processor, pulse until the dough comes together in a ball. Place the dough in large, lighly oiled bowl and turn it over to coat all sides. Cover with a damp towel and set dough in a warm place until doubled in bulk, about 1-1/2 to 2 hours. Punch dough down and knead a few strokes. Cover and allow dough to double in size again, 30 to 45 minutes. Punch dough down and turn it out onto a lightly floured surface. Knead about 30 seconds to remove air. Divide dough into 3 equal portions. With your hands, roll each into a smooth cylinder or loafs about 2" thick and 9" long. Place loaves on a lighly greased leaving at least 3" between the loaves. Brush all exposed surfaces with melted butter. Place baking sheet in a warm place, let loaves rise until doubled in bulk, about 30 minutes. Preheat oven to 375F. Bake risen loaves for 25 to 30 minutes or until bottoms are reddish brown and make a hollow sound when thumped. Allow to cool on racks. Preheat oven to 200F. Cut the colled loaves into 1/2" slices. Places slices flat on baking sheet and allow them to dry out in oven for 45/60 minutes or until dry. Check occasionally, turn slices over when dry on one side. When dry, raise oven temp to 300F for 10 to 20 minutes to brown slightly.

2 cups milk
1 cup butter (at room temperature)
2 1/4 teaspoons dry yeast
1/2 cup lukewarm water
1 teaspoon salt
1 teaspoon sugar
6 cups flour

Steps:

  • Dissolve yeast in lukewarm water and sugar; let rise.
  • Scald milk and allow to cool.
  • In a large bowl, combine milk, butter, yeast and salt.
  • Beat in enough flour to make a stiff batter.
  • Add more flour to make a smooth soft dough.
  • Knead well.
  • Cover and let rise until dough doubles in bulk.
  • Form buns the size of a large walnut.
  • Place a smaller bun on top of a larger one, and press down firmly with one finger so that the two stick together.
  • Place on a greased pan.
  • Let rise until doubled in bulk.
  • Bake in 350 F oven for about 15-20 minutes.

1 (6 ounce) package zwieback toast, crushed into crumbs
1 cup white sugar, divided
6 tablespoons unsalted butter, melted
3 (8 ounce) packages cream cheese, softened
¾ cup firmly packed brown sugar
5 large eggs
1 (15 ounce) can pumpkin puree
¼ cup heavy cream
1 ¾ teaspoons pumpkin pie spice
1 cup firmly packed brown sugar
1 cup coarsely chopped walnuts
6 tablespoons unsalted butter, softened

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Lightly butter a 9-inch springform pan.
  • Mix zwieback crumbs, 1/4 cup sugar, and melted butter in a medium bowl until well combined. Press firmly into the bottom and up the sides of the prepared pan. Place in the refrigerator to chill.
  • Beat cream cheese in a large bowl with an electric mixer until smooth. Add 3/4 cup white sugar and brown sugar gradually, until well mixed. Beat in eggs one at a time until mixture is light and fluffy. Add pumpkin puree, cream, and pumpkin pie spice and beat on low speed until incorporated. Pour mixture on top of the chilled crust.
  • Bake in the preheated oven for 1 hour and 35 minutes.
  • While the cheesecake is baking, mix brown sugar, walnuts, and butter for topping together in a small bowl until crumbly.
  • Remove cheesecake from the oven and sprinkle with walnut topping. Return to the oven and bake for an additional 10 minutes.
  • Remove from the oven and let cool completely. Refrigerate before serving for several hours, or overnight.
