1/4 cup olive oil
1 cup chopped onion
1 pound fresh green beans, trimmed, halved crosswise
1/4 teaspoon cayenne pepper
8 ounces zucchini, cut into 1-inch-thick slices
8 ounces russet potatoes, peeled, cut into 1-inch cubes
3/4 cup chopped fresh Italian parsley
1 28-ounce can Italian-style tomatoes, drained, juices reserved, tomatoes chopped

Steps:

  • Heat oil in heavy large nonstick skillet over medium-high heat. Add onion and sauté 5 minute Add green beans and cayenne pepper and sauté until onion is translucent, about 3 minutes. Add zucchini, potatoes and parsley. Pour tomatoes and their juices over vegetables. Bring to boil. Reduce heat. Cover and simmer until potatoes are tender, stirring frequently, about 45 minutes. Season with salt and pepper. Remove from heat. (Can be prepared 1 day ahead. Cover and refrigerate.) Serve warm or at room temperature.

1 eggplant, cut into 1 inch cubes
¼ cup olive oil
1 cup chopped onion
5 cloves garlic, chopped
½ cup Basmati rice
1 zucchini, cut into large chunks
1 large red bell pepper, chopped
3 fresh tomatoes, diced
1 cup Marsala wine
1 ½ cups water
½ teaspoon salt, or to taste
¼ teaspoon red pepper flakes
¼ cup chopped fresh basil
¼ cup chopped fresh parsley
1 sprig fresh rosemary, chopped

Steps:

  • Place eggplant in a colander and sprinkle with salt.
  • Heat olive oil in a Dutch oven or large pot. Rinse eggplant and pat dry. Saute until slightly browned. Stir in onion and saute until transparent. Stir in garlic and saute for 2 to 3 minutes.
  • Stir in rice, zucchini, red bell pepper, tomatoes, wine, water, salt and red pepper flakes. Cook over medium-high heat until mixture reaches a low boil. Reduce heat and simmer for 45 minutes, or until vegetables are tender.
  • Remove from heat and stir in basil, parsley and rosemary.

1-1/4 pounds bulk Italian sausage
1-1/2 cups sliced celery (3/4-inch pieces)
8 medium fresh tomatoes (about 4 pounds), peeled and cut into sixths
1-1/2 cups tomato juice
4 small zucchini, sliced into 1/4-inch pieces
2-1/2 teaspoons Italian seasoning
1-1/2 to 2 teaspoons salt
1 teaspoon sugar
1/2 teaspoon garlic salt
1/2 teaspoon pepper
3 cups canned whole kernel corn, drained
2 medium green peppers, sliced into 1-inch pieces
1/4 cup cornstarch
1/4 cup water
Shredded part-skim mozzarella cheese

  • In a Dutch oven or large saucepan, crumble sausage and cook over medium heat until no longer pink; drain. Add celery and cook for 15 minutes; drain. , Add tomatoes, tomato juice, zucchini and seasonings; bring to a boil. Reduce heat; cover and simmer for 20 minutes. This chunky stew delightfully uses the abundant zucchini, peppers, tomatoes and green beans my garden produces. It is perfect for a summer dinner or a cool weather lunch. I serve it with buttered crusty bread. Use your largest dutch oven to make this recipe, as it makes a lot! Leftovers freeze well. Feel free to adjust the amount of crushed red pepper to suit your tastes. The amount listed will give a mild tongue tingle. I usually chop up and throw in the entire green pepper, unless I can use the other half within a couple of days.

3 cups onions, chopped
1 cup potato, peeled and cut into 3/4 inch cubes

1 bay leaf
3 sprigs fresh thyme

Steps:

  • Cook sausage in a large pot over medium heat until fat begins to render from sausage, about 3 minutes. If pan is too dry, drizzle olive oil over sausage and cook until sausage is browned, about 5 more minutes. Stir onion and a pinch of salt into sausage; cook until onion is translucent, about 5 minutes.
  • Stir zucchinis and potatoes into sausage; pour in vegetable broth and water. Stir bay leaf, thyme sprigs, salt, and black pepper into mixture; bring to a boil. Reduce heat to low and simmer until stew is thickened and vegetables are tender, 45 minutes to 1 hour.

2 ounces assorted dried mushrooms
1 tablespoon canola oil
1 1/2 lbs beef eye round, cut into 1-inch cubes
1 small red onion, diced
1 carrot, sliced into thin rounds
1 parsnip, sliced into thin rounds
1 stalk celery, sliced thin
4 garlic cloves, crushed
2 sprigs fresh thyme
2 tablespoons tomato paste
2 tablespoons all-purpose flour
1 cup red Zinfandel wine
1 (14 ounce) can crushed tomatoes
2 tablespoons red wine vinegar
1/2 cup fresh parsley leaves, chopped
2 large zucchini
2 teaspoons unsalted butter
1 tablespoon fresh parsley leaves, chopped
1 tablespoon fresh thyme leave, chopped
1 tablespoon fresh oregano leaves, chopped
1 teaspoon lemon pepper
4 ounces egg noodles, cooked and drained
1 teaspoon salt
1 teaspoon pepper
1 tablespoon parmesan cheese, freshly grated

Steps:

  • Bring beef broth to a boil in a small saucepan over medium-high heat. Turn the heat off, and add the dried mushrooms. Set aside and allow mushrooms to absorb the moisture of the beef broth and the beef broth to absorb the flavor of the mushrooms, about 5 minutes.
  • Heat a heavy bottom nonstick Dutch oven or stockpot with the canola oil over medium- high heat. Add the beef cubes, being careful not to overcrowd the pot. Sear the cubes on all sides until well browned. (Take your time on this step, because if you skimp or rush here, the stews flavor will suffer). Once browned, remove cubes and set aside. Drain any excess oil.
  • Return the Dutch oven to medium-high heat and add the onions, carrot, parsnip, celery, garlic, and thyme. Saute until onions begin to caramelize. Once the onions have taken on a caramel color, add the tomato paste and mix well. Allow tomato paste to caramelize slightly, about 2 minutes or until it slightly darkens in color.
  • Remove mushrooms from beef broth, allowing any accumulated sand to settle to the bottom of the saucepan. Chop mushrooms roughly and set aside.
  • Pour beef broth through a coffee filter into a measuring cup. This will separate any accumulated sand from our flavorful broth. Set aside.
  • Once the tomato paste has caramelized, sprinkle flour over the mixture and mix well, scraping the bottom. Stir for about 1 minute to cook out the flour flavor. Add the wine and scrape the bottom of the pot to loosen any vegetables that may have stuck. Pour in the beef broth and crushed tomatoes. Bring to a simmer for approximately 5 minutes or until stew thickens.
  • Add the seared beef cubes and the mushrooms to the pot. Cover and simmer over medium-high heat until meat is tender, about 15 minutes. Stir in the red wine vinegar. Taste and adjust flavor with salt and pepper. Stir in parsley and remove from heat. Serve with Herbed Zucchini Noodles, instructions below.
  • Carefully drag a vegetable peeler the length of the zucchini to create long strands. Discard centers with the seeds.
  • Heat a large nonstick saute pan over medium heat with the butter. Add the zucchini and quickly toss to coat with the butter. Add parsley, thyme, oregano, and lemon pepper. Toss again and warm through, about 1 minute. Add the egg noodles. Toss once again until pasta is warmed through but zucchini remains crisp tender. Taste and adjust flavor with salt and pepper. Sprinkle with Parmesan. Toss again and serve warm.

8 ounces extra-lean ground beef
4 ounces whole onion or 3 ounces chopped, ready-cut onion (3/4 cup)
1 pound ripe tomatoes
12 ounces new potatoes
1 pound zucchini
1 tablespoon no-salt-added tomato paste
1/4 teaspoon salt
Freshly ground black pepper to taste
Few sprigs fresh basil to yield 3 tablespoons chopped

Steps:

  • Heat nonstick skillet until it is hot; add beef, and saute over medium-high heat until beef browns, stirring to separate.
  • Chop whole onion, and when beef is cooked, push it to the side of the pan and saute the onion over medium heat until it softens, just a couple of minutes.
  • Wash, trim and coarsely chop tomatoes, and add to the pan.
  • Scrub potatoes, cut into 1/4-inch dice and add to pan. Cover, and cook over medium-low heat.
  • Meanwhile scrub, trim and cut zucchini into 1/4-inch rounds, and add to pan along with the tomato paste with salt and pepper.
  • Wash and chop basil. A couple of minutes before vegetables are tender but still firm, stir in basil and finish cooking.

A recipe from my Italian family. Serve with a good Italian bread. Flavor is improved when refrigerated overnight and can keep for a few days in fridge. If stew becomes too thick, can thin out with some chicken broth. I have substituted a 14.5-16 ounce can of diced tomatoes (fire roasted or plain) for the cup of tomato sauce and cup of water or broth.

3 medium zucchini
2 medium potatoes
1 medium onion
2 garlic cloves
1 tablespoon extra virgin olive oil
1 cup tomato sauce or 1 (8 ounce) can tomato sauce
1 cup water or 1 cup chicken broth
1/2 teaspoon dried oregano
salt
hot red pepper flakes, to taste

Steps:

  • Cut off and discard the ends of the squash.
  • Cut squash in half length-wise and slice into 1" pieces.
  • Peel the potatoes; cut each in quarters and and then slice into 1" pieces.
  • Peel the onion; cut in half parallel to the root end and then into quarters, so all veggies are about the same size.
  • Finely chop the garlic.
  • Heat a 3-4 quart pot over a high flame and add oil when hot; lower flame to medium high, then add onion and garlic, stirring until onion is translucent.
  • Add squash and potatoes. Saute until potatoes are somewhat softened.
  • Add tomato sauce and water or broth. Stir in oregano, salt and pepper and mix well.
  • Heat to a simmer; lower flame to medium and cover with the lid a bit ajar.
  • Simmer, stirring occasionally, until the potatoes are fork tender, and the sauce has reduced somewhat.

My Dad took the veggies I had brought him from a friend's garden and just invented this one morning. His original recipe used Boca® crumbles. I like to make it with hamburger or ground turkey. This recipe was invented as vegetarian. You can add more Anaheims for a spicier stew.

1 pound lean ground beef
3 zucchini, peeled and cut into chunks
2 large potatoes, peeled and cut into chunks
2 Anaheim chile peppers, chopped
1 onion, chopped
2 bay leaves
1 teaspoon beef bouillon granules
½ teaspoon salt, or more to taste
¼ teaspoon ground black pepper, or more to taste
water, to cover
⅓ cup cold water
2 tablespoons cornstarch
2 dashes Worcestershire sauce

Steps:

  • Heat a large pot over medium-high heat. Crumble ground beef into the skillet; cook and stir until the beef is completely browned, 5 to 7 minutes. Drain and discard any excess grease.
  • Stir zucchini, potatoes, Anaheim chile peppers, onion, bay leaves, beef bouillon granules, salt, and black pepper into the ground beef. Pour enough water over the mixture to cover by 2 to 3 inches. Bring the mixture to a simmer over medium-low heat; cook at a simmer until the potatoes are tender, about 30 minutes.

2 cubed fresh red bell peppers
2 cubed potatoes
1 large onion, diced
8 ounces tomato sauce (homemade, or a can of prepared, or tomato paste is fine)
1 tablespoon salt
1 tablespoon pepper
1 tablespoon italian seasoning
1 tablespoon hot pepper
6 cups water, to cover approx
grated parmesan cheese, for topping
crusty Italian bread

Steps:

  • Rinse and cut up vegetables and put into a large pot.
  • Add seasoning, tomato and water to just cover the vegetables.
  • Bring to a boil over high heat.
  • Lower flame to simmer, and simmer with a tilted lid for two hours or until vegetables are tender.

1 pound lean ground beef (90% lean)
1 pound bulk pork sausage
2 cans (14-1/2 ounces each) diced tomatoes
2 medium green peppers, cut into 1/2-inch pieces
2 cups thinly sliced celery
1 cup chopped onion
6 medium zucchini, halved and cut into 1/2-inch slices
1 cup tomato juice
1 teaspoon salt
1 teaspoon Italian seasoning
1 teaspoon dried oregano
Grated Parmesan cheese, optional

Steps:

  • In a Dutch oven or large saucepan, cook beef and sausage over medium heat until no longer pink; drain and set aside. , Drain tomatoes, reserving the juice; set tomatoes aside. In the same pan, combine the peppers, celery, onion and reserved juice. Cover and cook over medium heat for 10 minutes., Add the meat, tomatoes, zucchini, tomato juice and seasonings. Cover and cook for 15 minutes or until zucchini is tender, stirring occasionally. Garnish with cheese if desired.

1/4 cup olive oil, plus more to drizzle
1 1/2 pounds small round potatoes, quartered
Salt and pepper
1/2 teaspoon Piment d'Espelette or cayenne pepper
1 teaspoon paprika
3 to 4 cloves garlic, sliced
2 firm small to medium zucchini, sliced 1/2-inch half moons
1 bulb fennel, trimmed and sliced into thin half-moon wedges, reserve a small handful of fronds
1 large or 2 small to medium onions, peeled and root attached sliced into thin wedges
12 cocktail tomatoes or 2 cups cherry tomatoes
4 cups vegetable or chicken stock
1 cup passata or tomato sauce
1/4 cup fresh tarragon leaves, chopped
Crusty French roll or bread, for passing

Steps:

  • In a medium soup pot, heat the olive oil, then add the potatoes. Season with salt and pepper, and then the Piment d'Espelette. Lightly brown, 5 minutes, while you chop the remaining vegetables. Add the garlic, zucchini, fennel and onion to the soup as they are chopped. Add the tomatoes and cover the pan to soften the vegetables and burst the tomatoes, 5 to 8 minutes. Add the stock and passata, and mix to combine. Cool and store for a make-ahead meal.
  • Reheat over medium heat and garnish with the reserved fennel fronds and a drizzle of olive oil. Serve with warm bread.

2 medium onions julienned
4 garlic cloves
1 bunch scallions sliced
1 pound green beans
3 medium diced zucchini
3 medium eggplant diced medium
2 large tomatoes diced medium
2 large tomatoes grated on box grater
1 can crushed tomatoes with juice
2 ounces extra virgin olive oil
1/2 cup parsley chopped

Steps:

  • In a medium-size heavy gauge pot, heat olive oil add onion, cook until soft, 4 to 5 minutes. Add scallions and a pinch of salt. Add garlic, cook 3 more minutes. Add grated tomatoes, cook 4 to 5 minutes. Add canned crushed tomatoes, cook 3 to 4 minutes. Fold in string beans, cook 5 to 8 minutes until slightly tender. Add zucchini, cook 3 minutes. Add eggplant and season with salt and pepper. Cook until all vegetables are tender. Adjust seasoning, salt and pepper; fold in parsley and drizzle extra virgin olive oil.

2 1/2 lbs beef chuck, diced
1 2/3 cups brown lentils
1 onion, chopped

5 carrots, medium size sliced
1 large zucchini, chunked
28 ounces crushed tomatoes
8 cups low sodium beef broth
1 cup dry red wine
4 bay leaves
1/2 teaspoon dried oregano
1 tablespoon dried thyme
1/2 teaspoon cayenne pepper

Steps:

  • In large (12") skillet (we like to use our iron skillet) over medium heat, saute' onions for 3-4 minutes then add the beef and garlic browning the meat and stirring for 5-10 minutes. Remove from heat and place in slow cooker.
  • Add lentils, carrots, zucchini, tomatoes, beef stock, wine and spices to the slow cooker. Salt and pepper to taste.
  • Set slow cooker on high for 4 hours or on low for 6 hours.
