This is a recipe my grandmother used to make at family gatherings. She was a great cook and has passed on now but we still manage to keep her recipe alive!

3 cups zucchini, diced
1 onion, chopped
4 eggs, beaten
1 cup buttermilk baking mix
½ cup vegetable oil
½ cup grated Parmesan cheese
½ teaspoon dried marjoram
1 teaspoon chopped parsley, or to taste
ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x6-inch pan or a 12-inch pie plate.
  • In a medium mixing bowl, combine zucchini, onion, eggs, buttermilk baking mix, vegetable oil, Parmesan cheese, marjoram, parsley and pepper; mix well. Spread into the prepared baking dish.
  • Bake for 30 minutes, or until lightly brown.

1 cup chopped zucchini
1 cup chopped tomato
1/2 cup chopped onion
1/3 cup grated Parmesan cheese
2/3 cup Bisquick Heart Smart® mix
3/4 cup fat-free (skim) milk
2 eggs or 1/2 cup fat-free cholesterol-free egg product
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat oven to 400°F. Lightly grease bottom and side of pie plate, 9x1 1/4 inches.
  • Sprinkle zucchini, tomato, onion and cheese evenly in pie plate.
  • Stir together remaining ingredients with fork until blended. Pour evenly into pie plate.
  • Bake about 35 minutes or until knife inserted in center comes out clean. Cool at least 10 minutes.

6 carrots, peeled
1 tsp. oil
1 small zucchini, sliced
1 ready-to-use refrigerated pie crust (1/2 of 14.1-oz. pkg.)
1 cup KRAFT Shredded Parmesan Cheese
5 eggs
1/3 cup KRAFT Mayo with Olive Oil
1/3 cup milk
1 Tbsp. finely chopped fresh rosemary

Steps:

  • Heat oven to 400ºF.
  • Shred 2 carrots; reserve for later use. Slice remaining carrots; cook in boiling water in saucepan 4 min. Meanwhile, heat oil in large skillet on medium heat. Add zucchini; cook 4 min. or until lightly browned, stirring occasionally.
  • Line 9-inch pie plate with pie crust; flute edge. Fill with layers of zucchini, shredded carrots and cheese. Whisk remaining ingredients until blended; pour over ingredients in crust. Drain sliced carrots; spread over quiche filling.
  • Bake 30 min. or until knife inserted in center comes out clean. Let stand 10 min. before cutting to serve.

This is a family favorite! As soon as the first few zucchinis are off the plants, this is the recipe that everyone has been waiting for all year!

1 (8 ounce) can refrigerated crescent rolls
2 tablespoons dried parsley
1 teaspoon salt
1 teaspoon freshly ground black pepper
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon dried basil
2 tablespoons butter
4 cups sliced zucchini
1 cup chopped onion
3 large eggs, beaten
2 cups shredded Cheddar cheese
1 teaspoon honey mustard, or more to taste
6 slices mozzarella cheese
¼ cup freshly grated Parmesan cheese

Steps:

  • Unroll and separate the crescent rolls into a 10-inch glass pie pan, pressing dough into the pie pan, pinching together seams. Set aside.
  • Mix together dried parsley, salt, pepper, garlic powder, dried oregano, and dried basil in a small bowl. Set aside.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat. Add zucchini and onion and cook until vegetables are tender, stirring occasionally, about 10 minutes. Remove from the heat and stir in dried seasonings. Allow to cool slightly.
  • Meanwhile, beat eggs in a bowl and add in shredded Cheddar cheese; mix well.
  • Brush the bottom of the crescent roll pie crust with honey mustard and line with mozzarella cheese slices.
  • Stir zucchini mixture into egg-cheese mixture, stirring until well combined. Pour mixture into the crust and sprinkle with Parmesan Cheese.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, 30 to 40 minutes. There will be some juice on the knife but no egg or cheese. If the pie gets too dark, you can cover the edges of the crust with foil to prevent it from burning during the last 10 minutes of baking.
  • Remove from oven and allow to set completely before serving, 10 to 15 minutes.

2 cups shredded zucchini (1 to 1-1/2 medium), squeezed dry
1/2 cup egg substitute or 2 large eggs, lightly beaten
1/4 cup all-purpose flour
1/4 teaspoon salt
2 cups shredded part-skim mozzarella cheese, divided
1/2 cup grated Parmesan cheese, divided
2 small tomatoes, halved and sliced
1/2 cup chopped red onion
1/2 cup julienned bell pepper
1 teaspoon dried oregano
1/2 teaspoon dried basil
Chopped fresh basil, optional

Steps:

  • Preheat oven to 450°. In a large bowl, combine first 4 ingredients; stir in 1/2 cup mozzarella cheese and 1/4 cup Parmesan cheese. Transfer to a 12-in. pizza pan coated generously with cooking spray; spread to an 11-in. circle., Bake until golden brown, 13-16 minutes. Reduce oven setting to 400°. Sprinkle with remaining mozzarella cheese; top with tomatoes, onion, pepper, herbs and remaining Parmesan cheese. Bake until edges are golden brown and cheese is melted, 10-15 minutes. Sprinkle with chopped fresh basil, if desired.

1 large onion, finely chopped
1 cup sliced fresh mushrooms
1 medium zucchini, chopped
1/2 teaspoon dried basil
1/2 teaspoon dried oregano leaves
30 g butter or 30 g margarine
1 1/2 cups cooked rice
5 eggs, beaten
1/3 cup milk
1/3 cup grated parmesan cheese
cherry tomatoes, halves (optional)
parsley sprig (optional)

Steps:

  • In saucepan saute onion, mushrooms,.
  • zucchini, basil and oregano in the butter or magarine on medium heat, until tender (not brown.).
  • Stir in the rice, eggs, milk, and half the cheese (N.B. Half cheese). Turn mixture into a well buttered 23cm pie plate and sprinkle with remaining cheese.
  • Bake uncovered at 180dg until set, approx 25 to 35 minutes.
  • Let stand for 1o minutes before cutting. Garnish with tomatoes and parsley.
