This Zucchini Noodles with Meat Sauce recipe is a healthier version of your favorite pasta dinner! It's an easy, low-carb dinner or lunch.

2 teaspoons olive oil (divided)
2 pounds ground turkey (at least 93% lean)
2 tablespoons diced yellow onion
2 garlic cloves (crushed)
¼ teaspoon red pepper flakes
½ teaspoon Italian seasoning
2 cups prepared pasta sauce (jarred or your favorite kind)
1 ¼ pounds zucchini (spiralized into zoodles)
2 tablespoons grated parmesan cheese (for garnish)
Fresh Basil (for garnish)

Steps:

  • Heat 1 teaspoon olive oil in a large skillet over medium heat. Add turkey and cook until cooked through and no longer pink.
  • Once the turkey is cooked, add the onion, garlic, red pepper flakes, and Italian seasoning and cook until onions are soft, about 1-2 minutes. Stir in pasta sauce and cook until hot and bubbly, about 4-5 minutes.
  • Place a separate skillet over medium heat and add the remaining 1 teaspoon olive oil. Add zoodles and sauté until tender, about 2 minutes.
  • Portion zoodles onto plates and top with meat sauce. Sprinkle each with ½ tablespoon parmesan and garnish with basil.

This zucchini pasta sauce with meat is such a hearty, flavorful meat sauce that includes zucchini and corn for extra flavor and nutrition.

1 pound ground beef (, lean)
2 Tbsp garlic ((about 4 large cloves), minced)
1 tsp onion powder
2 tsp oregano (dry (or 2 Tablespoons fresh, chopped))
2 tsp paprika (smoked (or sweet if you want less spice))
¼ tsp black pepper
6 ounces tomato paste ((one small can))
2 cups beef broth (or stock)
½ cup corn (, frozen or fresh (if using canned, drain well))
1-½ cups zucchini (chopped small)

Steps:

  • Cook the ground beef in a heavy skillet until browned, about 5-10 minutes, chopping and stirring often. (I love my cast iron skillet!)
  • When the ground beef is browned, drain off the excess fat.
  • With the pan on low-medium heat, add garlic, oregano, onion powder, and paprika and cook until garlic softens (about 2 minutes).
  • Add black pepper, tomato paste, beef broth and stir to mix together. I like to use my silicone spatula for this, but you could also use a whisk to get the tomato paste smooth.
  • Once mixed together, add corn and zucchini and stir in. Cover and simmer on low-medium for 20-30 minutes, stirring occasionally.
  • While sauce is simmering, cook your pasta according to package directions. This sauce is enough for one pound of pasta.
  • After 20-30 minutes of simmering, uncover sauce, turn off heat, and let sit 5 minutes before serving over pasta (or mixed in if you prefer).
  • Enjoy with my yummy Cheese Toast and side salad for a complete, wholesome, satisfying meal!

2 tablespoon olive oil
2 cloves garlic, crushed
1 onion, chopped
3 large carrots, diced fine
1 lb. ground beef (or ground turkey)
1-15 oz. can diced tomatoes
1-15 oz. can tomato sauce
1 tablespoon Italian seasoning
2 teaspoons red pepper flakes
1 teaspoon sea salt, more to taste
1 teaspoon freshly ground pepper, more to taste
1 tablespoon fresh basil
For serving: with fresh parmesan and basil
4 large organic zucchini, spiralized
2 tablespoons extra-virgin olive oil
salt and pepper

Steps:

  • In a medium sized saucepan, heat 1 tablespoon olive oil over medium-high heat. Add garlic and sauté for 1 minute. Add onion and carrots to saucepan. Let cook, stirring occasionally, for 5 minutes until onions are translucent and the carrots begin to soften.
  • Add meat to saucepan and let cook until no pink remains.
  • Add tomato sauce, diced tomatoes, spices, and 1 tablespoon fresh basil to the pan and mix well.
  • Bring to a boil over high heat. Reduce heat to low and let simmer for 15 minutes. Taste and adjust seasoning and remove from heat.
  • In a large skillet, heat remaining tablespoon of olive oil over medium-high heat. Add in zucchini noodles and big pinch of salt and pepper and let cook for 2-3 minutes. The zucchini noodles will continue to cook once you take them off the heat.
  • Transfer zucchini noodles to a plate, and top with meat sauce, fresh basil, and parmesan if using and serve immediately.

1 clove garlic, minced
1/4 teaspoon red pepper flakes
1 28-ounce can whole San Marzano tomatoes
Kosher salt
1 medium zucchini, cut into small chunks
1/2 pound capellini
1/4 cup chopped fresh basil
Grated parmesan cheese, for topping

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, about 1 minute. Crush the tomatoes into the skillet with your hands and add the juice. Add 1/2 teaspoon salt and simmer, stirring occasionally, until the sauce is slightly thickened, about 15 minutes. Add the zucchini and cook until crisp-tender, about 5 minutes. Season with salt.
  • Meanwhile, bring a large pot of salted water to a boil. Add the capellini and cook as the label directs. Drain and add to the sauce along with the basil; toss to coat. Top with parmesan.

2 medium onions, chopped
8 large tomatoes, chopped

Steps:

i saw a version of this recipe on a local cooking show and have played with it to make it faster and easier for us nonprofessional cooks out there. Everytime I've made this dish I have never had a single leftover. we've also been known to add other squash, but i think it's best with the zucchini. It's very delicious, fast, and unusual. Enjoy!! **NOTE** recently I have tried slice the zucchini into julienne strips and WOW!! its like zucchini noodles, so either way is great!!!

1 medium zucchini, sliced into thin julienne
1/2 cup extra virgin olive oil
1 (16 ounce) box thin spaghetti
1 teaspoon garlic, minced fine
1/3 cup parmesan cheese, freshly grated is best

Steps:

  • cook pasta according to the box instructions. while pasta is cooking, gently heat oil and garlic over medium heat.
  • slice zucchini, thin, using a slicer.
  • place zucchini in a collander and salt heavily. allow to sweat for 10 minutes and rinse thoroughly. dry well.
  • fry zucchini in garlic oil until lightly golden; do not crowd the pan, take your time and fry in small batches.
  • the zucchini should take about the same amount of time as the pasta. when pasta is ready to be drained, reserve a 1/4 cup of the cooking liquid.
  • strain pasta and return to the cooking pot. add zucchini and garlic oil. add water depending on how dry the pasta looks. it could take the whole 1/4 cup depending on how much oil evaporated while frying.
  • add cheese and gently toss.
  • serve immediately.
