It takes a little time on the stove otherwise it is quite simple. Just a couple of ingredients slowly cooked in olive oil until jammy and buttery. Delicious on toast or sandwiches. AND it's something else to do with ZUCCHINI!!

2 pound(s) zucchini
1/4 cup(s) olive oil or butter if you'd rather
2 - minced shallots or cloves garlic or combination of both
- salt and pepper to taste

Steps:

  • Coarsely grate the zucchini. Let it drain in a colander for 3 to 4 minutes or until you are ready to begin cooking. To hasten cooking time, squeeze the water out of the zucchini by wringing it in a clean cloth towel.
  • In a deep skillet, heat the olive oil/butter. Sauté the shallots briefly. Add the zucchini and toss. Cook and stir over medium to medium-high heat until the zucchini reaches a spreadable consistency. If you scorch the bottom, turn the flame down! (And scrape those delicious bits into the marmalade for added flavor.) The zucchini will hold its bright green color and slowly caramelize into a nice vegetable jam. Enjoy on toast, or as a side dish! Keeps well and can be stored in the refrigerator for about a month. One of my friends used red onion and garlic. She said it was fantastic!

Looking for a way to use up all the Zucchini . This is a very easy recipe and really tasty. My husband even liked and he usually don,t want to taste anything with Zucchini in it.

5 cups shredded zucchini (unpeeled)
2 oranges, rind and all finely chopped
2 tablespoons lemon juice
5 cups sugar

Steps:

  • Mix ingredients and bring to a boil.
  • Boil rapidly stirring for 20 minutes.
  • Add 1/2 bottle certo and boil again for 1 minute.
  • Skim if necessary and pour into jars.

The peak of summer is often marked by an abundance of zucchini and the eternal question of what to do with it! By grating and slowly simmering zucchini with butter and shallots, you can transform 2 pounds of zucchini into a concentrated spread that you can keep stashed inside your fridge in a small jar. Inspired by Julia Child's Grated Zucchini Sautéed in Butter and Shallots recipe, this version cooks much longer to really intensify the vegetal sweetness of zucchini. Try it on buttered toast or loosen with pasta water and coat your favorite noodle instead of pesto.

Yield about 1 1/2 cups of zucchini butter

2 pounds zucchini (3 large or 4 medium)
3 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
1 shallot, finely chopped
3 sprigs fresh thyme
Kosher salt and freshly ground pepper
1/2 teaspoon finely grated lemon zest

Steps:

  • Grate the zucchini on the large holes of a box grater into a colander set over a bowl. Squeeze the zucchini to remove the excess liquid.
  • Heat the butter and olive oil in a skillet over medium heat. Add the shallot; cook, stirring, until softened, 2 to 3 minutes. Add the zucchini, thyme, 1 teaspoon salt and a few grinds of pepper; cook, stirring occasionally, until the zucchini is very tender and almost paste-like but not browned, 35 to 40 minutes, mashing it with a fork in the last 5 minutes. If the zucchini starts sticking, stir in a splash of water; reduce the heat as needed to prevent browning.
  • Remove the pan from the heat, stir in the lemon zest and season with salt. Let cool, then discard the thyme and transfer to a small jar. Store in the refrigerator for up to 1 week.

TANGY ZUCCHINI MARMALADE

Everyone has too much zucchini in the summer. Here is another way to use it. A good friend gave this recipe to me along with some zucchini and it was yummy. It has no pectin in it, but uses jello.

5 cups sugar
5 cups zucchini (grated and well packed)
2 oranges (ground, rind and all)
1 (6 ounce) can frozen orange juice concentrate
1 tablespoon lemon juice
1 (6 ounce) package orange Jell-O

Steps:

  • Combine everything but the jello in a pot.
  • Boil for 10 minutes.
  • Add the orange jello and stir well.
  • Put in hot, STERILE jars and top with wax.

6 cups peeled grated fine zucchini
6 cups sugar
2 tablespoons lemon juice
1 (20 ounce) can crushed pineapple, drained well
1 cup water
1 (3 ounce) box apricot Jell-O

Steps:

  • In a saucepan place zucchini and water, bring to a boil and boil 10 minutes.
  • Add sugar, lemon juice and pineapple.
  • Cook 10 minutes.
  • Stir in apricot Jello and cook 10 minutes.
  • Pour into hot, sterile pint jars and adjust lids.
  • Cool completely.
