DOUGH
5 cups all purpose flour
1 cup granulated sugar
5 level teaspoons baking powder
1/2 pound melted butter, cooled
1/2 teaspoon salt
5 eggs
2 teaspoons vanilla
ICING
1 egg white
1 box confectioners sugar sifted
Milk, only amount needed to make icing on thicker side
1 tablespoon melted butter, cooled
Food coloring, optional

Steps:

  • Combine all ingredients to form dough. Take a small amount of dough and make ball in palm of hands, then place on cookie sheet. You may also want to make some in the shape of wreaths by making a tube and then pinching together the ends. Bake at 400 degrees for approximately 10 minutes, until bottoms are very light brown. Let cool. Combine all ingredients for icing. Dip the top of each cookie into the icing and then place on foil to dry. While wet, shake on sprinkles or jimmies. After the icing dries, you may want to transfer the cookies to another sheet of foil so that the excess icing comes off and the bottoms dry.

½ cup margarine, softened
1 cup white sugar
1 egg
1 cup grated zucchini
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 cup raisins

Steps:

  • In a medium bowl, cream together the margarine and sugar until smooth. Beat in the egg then stir in the zucchini. Combine the flour, baking soda, salt and cinnamon; stir into the zucchini mixture. Mix in raisins. Cover dough and chill for at least 1 hour or overnight.
  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets. Drop dough by teaspoonfuls onto the prepared cookie sheet. Cookies should be about 2 inches apart.
  • Bake for 8 to 10 minutes in the preheated oven until set. Allow cookies to cool slightly on the cookie sheets before removing to wire racks to cool completely.
