This is a spicy sweet tomato chow chow that we make in the summertime with our home grown tomatoes. This goes well as a side to peas and other vegetables and also poured over a block of cream cheese as a spread with crackers.

12 cups tomatoes
2 large onions
3 green bell peppers (seeds removed)
5 hot peppers (the seeds and white membranes add heat, your choice to use or remove)
2 cups white vinegar
2 tablespoons salt
1 1/2 cups sugar

Steps:

  • Process all vegetables in a food processor to desired consistency. We like ours to be a bit chunky like salsa.
  • Bring vinegar, salt and sugar to a boil on the stove to dissolve ingredients.
  • Combine everything in a large stock pot.
  • Bring to a boil and then simmer uncovered for 2 hours.
  • Can in pint jars or enjoy immediately.

2 egg yolks, beaten
2 tablespoons prepared mustard
2 tablespoons white vinegar
1 tablespoon cold water
1 tablespoon prepared horseradish
1 tablespoon butter, softened
1 tablespoon white sugar
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup whipping cream

Steps:

  • Combine, egg yolk, mustard, vinegar, water, horseradish, butter, sugar, salt and pepper in pot. cook and sir over low heat, until sauce thickens (5-10 min).
  • Remove from heat and stir until sauce is smooth.
  • Cool, then add whipping cream folding in gently. Cover and chill until ready to use.

Her marinade is also great when grilling New York strip steaks.

1/4 cup honey
3 tablespoons reduced sodium soy sauce
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 garlic cloves, peeled
1/4 teaspoon fresh coarse ground black pepper
2 (4 ounce) beef sirloin steaks (4 ounces each)
3 green onions, sliced

Steps:

  • In a blender, combine the honey, soy sauce, oil, vinegar, garlic and pepper; cover and process until blended. Pour 1/3 cup marinade into a large resealable plastic bag; add steaks and onions. Seal bag and turn to coat; refrigerate for at least 1-2 hours. Cover and refrigerate remaining marinade for basting.
  • Coat grill rack with cooking spray before starting the grill. Drain and discard marinade. Grill steaks, covered, over medium-hot heat for 4-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°; medium, 160°; well-done, 170°), basting occasionally with reserved marinade.

1 tsp. coarse grind black pepper
1 shallot, minced, divided
2 Tbsp. chopped fresh thyme leaves, divided
1 Tbsp. butter
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
2 Tbsp. GREY POUPON Dijon Mustard

Steps:

  • Heat oven to 325°F.
  • Place meat on rack in roasting pan sprayed with cooking spray. Mix Worcestershire sauce, pepper, 2 Tbsp. shallots and 1 Tbsp. thyme until blended; rub over surface of meat.
  • Bake 1-1/2 to 1-3/4 hours or until meat registers 140°F for medium-rare doneness or 150°F for medium doneness. Transfer meat to carving board; cover loosely with foil. Let stand 15 to 20 min. or until meat registers 145°F for medium-rare doneness or 160°F for medium doneness.
  • Meanwhile, microwave butter and remaining shallots in small microwaveable bowl on HIGH 1 min. Cool 5 min. Add sour cream, mustard and remaining thyme; mix well.

6 (6 ounce) sirloin tip steaks (or whatever size steak you prefer)
2 tablespoons mustard powder
1/4 cup fresh chopped oregano
1/4 cup fresh chopped thyme
1/2 cup finely chopped garlic
1/2 cup light soy sauce
2 tablespoons thin sliced fresh ginger
1 tablespoon lite olive oil
1 teaspoon lemon pepper
1 teaspoon grated fresh lemon rind
black pepper

Steps:

  • Sprinkle both sides of the steaks with mustard powder.
  • Mix remaining ingredients and stir well.
  • Put steaks in a shallow pyrex dish (or other non metallic dish).
  • Spoon half the marinade on top side of the steaks, turn steaks over and spoon remaining marinade on them.
  • Refrigerate covered for at least 4 hours or overnight.
  • Preheat BBQ to medium-high.
  • Remove steaks from marinade.
  • Cook about 4 minutes on each side for medium rare.
  • Put steaks on a warm platter cover with tinfoil and let them rest for 10 min in a warm place.
